
These were inspired when I went to SLC for girl's only weekend with my sisters. We went to the Cheesecake Factory..that is not my inspiration. (very disappointed with that place) but we went to mall and inside was the glorious store, Godiva Chocolates. So, of course we had to go in. And there sitting in the glass case was a wonder to be hold! A Salted Caramel Truffle. Oh my goodness! It was like eating a little bit of heaven..if you could eat heaven. So, when I got back from said trip, I went in search of a yummy caramel frosting and here is the final result! And please, try it! If you like sweet and salty, this is the cupcake for you. My friend C tried some, and she liked it..I liked it, and my husband, daughter and both sons liked them So here it goes:
you will need chocolate cupcakes. I used my chocolate pumpkin cake recipe the first time, and I have also used a triple fudge mix. I think the frosting needs a mild chocolate cake, so I wouldn't use the fudge one again for this frosting..but some people might like it.
Caramel Frosting;
1/2 cup butter or 1 stick
1/3 cup whip cream (the real stuff)
1 cup brown sugar
1 tsp vanilla
melt the butter, cream and sugar in a medium pot over medium heat. The recipe said to just heat until the sugar dissolves, but I liked the results better if you heat just till boiling point, let it simmer for like 1 minute more after that..pour hot caramel in a mixing bowl, and mix on low speed for about 1 minute, then add 2 cups of powdered sugar, one at a time or the sugar will fly everywhere. Mix until smooth. The frosting will still be some what warm. That's okay. This stuff sets up really fast. Put your frosting in a ziploc bag, or if you are really fancy, one of those Wilton bags, snip the end and start frosting your cupcakes! Because this sets up really fast, i would recommend frosting three cupcakes at a time, and then sprinkle those with sea salt. Just enough to make it look pretty, and to give it that punch of saltiness, but don't over power it! Sea Salt is pretty distinct. And wah-la! Salted Caramel Cupcakes. Try it and let me know what you think! :)
